Tomatoes, Cilantro, and Cheese


Unfortunately I don't always measure when I cook so much of this is guesstimates.

4 tomatoes
1 cup chopped cilantro
Montery Jack Cheese
Olive Oil

Slice the tomatoes. Pour olive oil over them. Slice or cube up your cheese and finely cut your cilantro to put over it. If you are not going to eat all of this at once and store it in the fridge to eat over several days then definately don't pour the olive oil over the cilantro. My experience is that it'll make the cilantro soggy and make it rot faster.
